Happy Saturday Everyone!!
Sunday is typically my food-shopping day, so when I woke up today I knew I had some sad items in my fridge I needed to use or loose. I absolutely hate throwing food away if I wasn’t able to use it in time (produce, meat, etc.) So I like to make a game out of using what I have available to make a fun meal of some kind!
This morning I knew I had leftover pre-baked butternut squash from Wednesday night, raw mushrooms that were tiptoeing the line, and several avocados I need to use in the next week that I planned to make guac out of and never ended up using. I also had a container of spinach that maybe I shouldn’t have used, but YOLO, lol.
My sister and I were visiting a cute lake town last summer when we both ordered some sort of brunch bowl (they called it something else, I can’t remember). But all I know is it was made with a sort of grain, butternut squash, and a whole bunch of other yumminess and was topped with 2 fried eggs. I knew this morning that that’s what I wanted to recreate!
Now, since I didn’t have any left over rice or grains I needed to use up I just omitted that part, but I started by sauteing the mushrooms with a little kosher salt in a pan and then added in the squash just to warm it through. I have more of both of these two ingredients then I could eat today, so I packed up what was left of them for the same breakfast tomorrow!
Once the squash started to warm through, I added spinach to the pan. I will admit, I used my smallest pan not anticipating the use of spinach, but I folded everything in and made it all work together.
I transferred the mixture into a bowl I wanted to eat out of, and the rest like I said into a container for tomorrow! Honestly, I love eating things all mixed together out of a bowl.
Next, I fried up 2 eggs right in the same hot pan. Now, being prego, fried eggs are a no-no, so I made sure to cook the eggs fully through, but I can only imagine how good this would be with a somewhat runny egg!

I laid the two eggs on top of the spinach, squash, and mushrooms, then topped with 1/2 of an avocado, sprinkled a little salt, and then added feta cheese to top it off!
As I was eating this the only thing I would have LOVE to have added was dried cranberries for a little sweetness, but honestly I could eat this bowl every day if I could! It was super filling and as delicious!
Let me know if you try this out and if you have any other variations of things you did to change it up! I could see throwing in pretty much any type of veggie, tomato, beets, garlic, whatever you have! Thats the beauty of making a bowl, anything goes!
