I was originally going to title this post “Chocolate, Peanut Butter, Banana, Honey, Oatmeal Bites” but that was a really long title, LOL! Regardless, those are the only ingredients in these yummy breakfast bites!

On a work day I don’t have time to eat until between 8-10 am when I’m settled at work and depending on the day I can find a few minutes to eat some oatmeal or cereal or something. I am one of those that needs breakfast, though, since my blood sugar drops low and I get the uncomfortable shakes. Some days I wasn’t able to get enough in my body before those shakes started, so that’s when I knew I needed to eat something quick and easy on my commute! For those of you thinking, “why don’t you just get up earlier and eat, duh”, that is easier said than done for me, haha!



Sometimes I might have an apple, banana, or granola bar, in the car, but they aren’t the easiest thing to eat while driving and don’t tend to keep me full for very long. I knew I needed something fast, non-messy, and mostly fast, so I started making these breakfast bites last year and have made variations to fit my tastes! I grab 2 of these out of the freezer before running out the door in the morning and they keep me going for a while, so I wanted to share this recipe with all of you!
Here is the recipe that I like the most and hope you enjoy, too!

Breakfast Bites
- 2 cups Rolled Oats
- 3 TBSP peanut butter
- 1.5 TBSP honey
- 1/4 cup mini semi sweet chocolate chips
- 2 ripe bananas
Start by mashing up the bananas in a mixing bowl with a fork. Add the oats to the bananas and stir together.
In a separate bowl, microwave the peanut butter and honey together for 15-20 seconds. This is simply to make it easier to mix throughout the oats, not necessary but does make it easier!
Combine the peanut butter – honey mixture into the mixing bowl with the oats and banana and mix thoroughly. Add the chocolate chips (but make sure the peanut butter wasn’t too warm, you don’t want them to melt). Place mixing bowl in the fridge to set for about an hour.
Once the mixture has had time to chill, remove from the fridge and get a freezer safe container, I like to use a cube Tupperware container to store the bites in. Using a spoon or cookie scoop, scoop similar size amounts into your hand and roll into small bites. I like to cut some parchment paper to size and stack as many rows in the container as I can. Place in the freezer for when you want them!
